What is Traditional Balsamic?

There are varying types of balsamics out there (like our delicious chocolate balsamic for instance), but traditional balsamic is made only in Reggio Emilia and Modena, Italy where it is overseen by a certification agency. Every certified traditional balsamic will have a DOP stamp and Aceto Balsamico Tradizionale designation by the certification company. That way you know it is a true, certified traditional balsamic.

Traditional balsamic, which is made using traditional techniques (hence the name), is not actually for cooking since heat will take away its distinctive bouquet. Instead, it is intended to be applied after food has already been cooked or simply to put on food that doesn’t need to be cooked.

Traditional balsamic will have not have a strong acidity but a tartness to it instead. It may also have some smokiness to it which it can pick up from the wood it aged in. This makes it a great addition to desserts, just like our chocolate balsamic. This makes sense as the only ingredient is grapes, grape must to be exact. However, traditional balsamic can be applied to grilled meats and other foods, as well.

Mouth-watering Lime-flavored Pork Chops – It’s what’s for dinner!

1. Marinate your pork chops for 1 – 2 hours in the following ingredients:

***Be sure to massage the chopped garlic, salt and pepper into the pork chops.

2. Prepare your non-stick frying pan with 2-3 TBSPs of grapeseed oil, avocado oil, or another oil that can withstand medium-high heat (enough to cover the bottom of the pan).

3. Turn your burner on to medium-high heat (let it heat up before adding the pork chops).

4. Pan-fry your pork chops, 2-3 minutes on each side, depending on the thickness.

Serve with your favorite veggies and enjoy!
